I love this sun-burnt country
This land of great extremes
From its sandy white beaches
To the tallest Eucalyptus trees
Black swans and soaring eagles
Amazing bird-life; flying free
I love these glorious red gold sunsets
I adore her dark beautiful skies
I've shared in her magnificent bounty
I've eaten the occasional meat pies
Enjoyed tasty Aussie barbies
Watched dad imbibe her bitter beers
Sat and watched her finest sportsmen
Heard many magnificent cheers
I've swam across the mighty Murray
Caught shrimp to bait fishing hooks
Climbed a few steep mountains
Sat beside cool babbling brooks
Driven her dry dusty back roads
Along Salt Creek's 42 mile crossing
Between the Coorong and the sea
Watched waves fiercely tossing
Her Southern Right Whales playing
Watched seals and dolphins gleefully
Made some beautiful memories
Ahhh... this wide brown land for me

This day is special
This day is great
I know because
I can contemplate
I feel so alive Lord
I feel so blessed
Because you love me
No matter what
I can see the wonder
Of this beautiful world
I can hear the birds singing your praise
I know how much you love us all
I touch everything around me

With wonder and amazement

The echidna
The echidna never made it
Across the bitumen road
It was left there; for ants to eat
The opposite of while it was alive
Such is life as we live it
Such is the nature of nature
We are born to die
We grow apace; this human race
But how much do we actually live?
Many merely exist...

Vanilla chia pudding
2 cups raw almond or coconut milk
1/2 cup chia seeds
1 vanilla pod, seeds
1/3 maple syrup or sweetener of choice
Mix all ingredients in a large bowl until well combined
Refrigerate for at least 2 hours
Serve with fresh berries
and a sprinkle of buckwheat grouts
and chocolate bits

Terms of endearment
Whenever things are rosy
You call me mummy dear
But whenever times are shaky
Another title is exposed; I fear
Don't like it when you call me
"Mother"; it sounds so unloving; drear
I know when you are angry
I feel your malcontent my dear
That's when your terms of endearment
Are so insincerely meant
You make me feel like shedding a tear...

The boil
Mental suffering is like a painful boil
Pressure building up inside; roiling
Heat; emanating from deep within
Feel it burning up through your skin
As it festers; deep within your mind
A painful memory; therein lies
Some ghost is calling you to task
"Why didn't you hear me?"
"Why does this pain still last?"
To escape this burden you must be
Yes; you must be; brave
Take the sharpened lance
Strike home; deep within
Through that hot, distended skin
Pierce that boil within its heart
Excise that boiling putrefaction
Allow the heat to slowly depart
Then and only then
Will peace abound
Apple slice
Ingredients:
2 cups SR flour
1 cup sugar
3 apples, peeled, cored, diced
125 g butter
1 egg
Method:
1. In medium mixing bowl
Toss apples in SR flour and sugar
2. Melt butter in small saucepan
Stir in egg
3. Pour butter and egg into Apple mixture, combine
4. Spoon into greased slice tin
Bake at 180 degrees C
35 to 40 minutes
Or until top is golden brown
and a skewer comes out without gooey mess
