Gluten Stuffed Lamb


(Will need an electric frypan or large lidded fry pan for this recipe)

Ingredients:

Stuffing:
2 cups soft breadcrumbs straight from fresh loaf
Lump of butter
Pinch of salt
Mixed herbs (parsley, oregano, basil, tarragon)( I prefer to mix my own as I don’t like the packaged mixed herbs)
I large chopped onion
2 eggs
Method: mix thoroughly and leave

Liquid:
½ pint of water (approx 300 ml)
1 teaspoon Marmite
1 chopped onion
2 cloves garlic
Method: dissolve Marmite in warm water and add rest of ingredients. Leave.

Gluten Lamb:
2 eggs
1 cup soya milk
½ cup water
1 teaspoon Marmite (dissolved in the milk or water)
1 dessertspoon soya sauce
1 teaspoon salt
½ tsp sweet basil
1 tsp parsley, oregano, tarragon or mixed herbs to suit
(1 ½ cups gluten flour- don’t add till all other ingredients are mixed together)
Method:
Mix all together (except gluten flour).
When all ingredients are mixed then add the gluten flour.
Mix into a soft mass.

Now: heat oil in frypan. When ready, place the gluten mixture into the frypan and spread out and brown one side.
While browning, place the stuffing mixture onto one third of this mixture. When browned, flip the other two thirds of the mix on top of the stuffing mix and press down to make a roll in the middle of the frypan. Add liquid mixture and cook on low for 1 hour, occasionally spreading liquid to moisten top of the roll.
Continually check liquid level to keep it from going dry.
Slice and serve with salad or veg.
I allow it to cool and then slice and lightly fry in olive oil till browned and then serve with salad or vegetables as well.

Gluten Duck



Ingredients:

1 ¼ cups soya milk
2 eggs
½ teaspoon herbs
½ cup crushed walnuts
½ cup gluten flour
½ cup oats
1 teaspoon marmite
3 heaped tablespoons bread crumbs
1 finely chopped onion
2 tablespoons olive oil

Method:

Beat eggs and soya milk with the oats.
Rest for 20 minutes to allow oats to soften.
Add rest of ingredients and form into patties.
Fry in olive oil until browned.
May be served with salad or vegetables.

Can even make a mushroom gravy to serve with them.

Country Cottage Rolls

Ingredients:

2 eggs
¼ cup pecan nuts (or 50g pkt)
I onion, peeled and quartered
1 tablespoon soy sauce
200g low fat cottage cheese
½ cup dried bread crumbs
¾ cup quick oats
2 sheets puff pastry
1 tablespoon soy milk for glazing
2 tablespoons sesame seeds


  1. Place eggs, pecans, onion, soy sauce and cottage cheese in food processor and blend until onions and pecans are finely chopped.
  2. Transfer to a bowl and mix in breadcrumbs and oats.
  3. Cut pastry sheet in half and spoon mixture down one edge. Brush other edge with milk.
  4. Roll to enclose filling with pastry and repeat with remaining mixture and pastry sheets.
  5. Cut each log into 6 even lengths. Brush with milk and sprinkle with sesame seeds.
  6. Place onto lightly oil-sprayed tray and bake in a hot oven @ 200̊C for 15-20 minutes until golden brown.

Makes 24
These will freeze well and can be kept in freezer for up to two months.


Lemon pie

The taste: tangy lemon
The scent: lemon zest
The essence: lemon juice
The pastry; buttery sweet
Yummy lemon pie!

Ingredients: 
1 can of condensed milk
2 egg yolks
I dessert spoon lemon zest (rind)
1/2 cup lemon juice
Method: 
Place all ingredients into a bowl and mix.
Pour into blender: blend well
Tip into a cold cooked pastry case
Set in fridge!
To serve:
Sprinkle icing sugar on top!
To eat: enjoy!
                       

The Copper Triangle

We took a little train trip
Yes! Actually it was on a little train!
It went around a few places
Showing us traces
Of how copper was found
Up & around Moonta!
It showed us all how
The Copper Triangle was made
Between Wallaroo, Kadina 
And Moonta!
We saw photographs
Of those poor ten year old boys
Who had to work so hard
To feed their poor families
The death rate was so high and
I'll tell you why!
It was such a dirty job
Without even imagining
All of those toxins!
The local cemetery 
Boasts many children's burials
Due to all of that lead
Left in those copper beds
As they tried to get it all out of that ore!


High coffee in Kadina

We had a Grinders coffee break
In old Kadina town all
Enclosed within a tiny oasis!
With date palms and another 
With huge leaves like umbrellas
And even a fruit salad plant
In attendance!
It's flowers were huge
Like a massive banana:
A big green appendage!
The plant's other name; like giant lily
Is Monteria something-or-other
But it doesn't really matter!
There was a lovely green fern too
As we sat in the shade there
Relaxing! We shopped at Target Country
Near the end of our escapade
Before heading back to Port Wakefield!
Though I looked around
The others didn't even notice
The cigarette butts on the ground
This must be the smoker's retreat
As they wait at night for their pizzas!


Black and white TV

In days of old when we were kids
We had a black and white TV as well
But TV reception wasn't swell!
But I must admit: the rain clouds improved it!
We had The Flintstones and F-Troop
Cartoons and other stuff
Not very exciting I guess!
But we loved it none the less
As we were just grateful for all we had!
