Ingredients:
6-8 potatoes (Cold, cooked, mashed)
6 cups plain flour
2 eggs
Milk for yeast (and some extra)
2 spoons full of lard (Chicken lard)
4 teaspoons salt
300 ml cream
3 sachets of dried yeast
Sugar
Method:
1. Place yeast in bowl of warm milk
and add I teaspoon of sugar
(Dissolve sugar first, then add 3 sachets of yeast
Stir and leave)
2. Run lard into flour and add salt, mashed potato
eggs, cream and yeast
3. Mix all together and add extra milk if necessary
4. Divide in half and let rise for 1 to 11/2 hours in a warm place
Covered with a tea towel
5. Form into scones and brush with egg mixture
6. Bake in a medium to hey oven 180 Degrees C
For about 15 to 20 minutes
Makes about 100 scones
