Cashew rice burgers

Ingredients:
2 carrots: finely grated
2 Medium celery sticks: finely diced
1 onion: finely diced
1 packet French onion soup mix
1 cup broken cashews or pine nuts
salt to taste
2 cups cooked sun rice
bread crumbs
soy milk

Method:
Mix all ingredients together except milk and breadcrumbs.
Pour a little soy milk into mixture to make it sloshy.
Add enough breadcrumbs to bind into patty consistency.
Shape into burger sized patties and fry until golden.
Nice served in salad rolls or served with steamed vegetables or salads.
