Gym junkie

Spent a couple of years working out
Had two girls at home: wanted a son
Wanted to have my boy
Wanted to give him a good start!
The workouts were gruelling
Hard work that's for sure
No other way to make certain
No other way to make sure
To give our baby the very best start!
I remember running up
Montefiore Hill: my legs like lead
Though I tried to make them move
It was like I just couldn't make it
In my head! Forced my self and 
Finally I was at the top
I was just so thankful that I could stop!
Those stairs along the River Torrens
We ran up and down them
So many times! My legs burning
My lungs just the same! 
Our son is now 18 years old
Well worth the effort!


Mushrooms on toast

As a kid we walked every where
To friend's places after school
And also on weekends
Summer days were glorious
Winter days were good as well
As long as it wasn't raining
We had time to do lots of walking
One day we went hunting for mushrooms
Frances had a big family with 6 kids
They were always looking for things to eat
I helped look for mushrooms
Even though I'd never eaten them before
When the time came to eat them
I couldn't so I gave them to the others!
They disappeared pretty quickly!
Another time we found prickly pear fruit
Ripe and red: ready to eat! 
I watched as they picked and ate but
Again I wasn't sure about it
I guess I was a fussy little eater
Just like my kids were and 
Just like my grandsons are today! 
Mushrooms are an acquired taste
I love eating mushrooms now!

Still don't know about those prickly pears!
But who knows what you'd eat 
If you were hungry enough?

The Ha-Ha Pigeon

Many years ago we helped
A nearby family when rain
Threatened to ruin their apricots
We helped cut their fruit  
Just up the road from our place
I still remember that Kookaburra's 
Loud song as we worked
My friend's dad called it
A Ha-Ha Pigeon
I guess that was enough 
To break through
That language barrier as we all laughed!
I imitated him: not out of rudeness
But because I liked the way 
It sounded!
I thought it was very appropriate
A good name for our laughing bird
The Kookaburra!

Happy Easter

May the dear Lord bless all 
Who call upon His Holy name!
We commemorate His precious life
We recognise His precious words
Those words He gave to move us
Those gifts He gave to save us
His precious blood; shed for us
His precious life: given for our sins
He; the unblemished Lamb of God
Sacrificed on Calvary to spare us
The pain and struggle of our sinfulness!
Jesus came to take away our sins
That we may be cleansed and washed
His blood: that blessed gift of salvation
His tears shed for those sins He bore
As he took us all up into his peace
That peace which passes all understanding
That peace which only He could bring
As he came from heaven sinless
To allow us to ascend with Him
That where he was, we should go also
This He promised all those years ago
This He promises today
As we picture Him in the agony
Upon that painful cross
Taking upon His beautiful soul
All our trangressions' and sinful ways
That we might be spared this cost!





A sense of belonging

I've spent my whole life searching
Looking for some place
Where I can feel at home
A place that feels like a second skin
Maybe a soft warm place
Somewhere full of light and sunshine
With no darkness coming in
I guess I'll never find that some-place
I guess I'll never feel at home because
Sometimes I still feel so lost and lonely
Even though I am not alone!
But there is one place where 
I do feel closer that ever before
This secret place within my heart
That's where I feel the closest
To my dearest Lord Jesus
He lives here within me
This heart is His Temple
Yes! Right here inside
This heart is where 
My dear Lord resides
This is where it all starts!



Angry Birds and Darth Vega

At 2 he's a real little gamer
He knows just what to do
He shows me how to play
He shows me what to do
You'd never believe me
If I didn't tell you
He plays Angry Birds with Star Wars
He says "Look Nana: Darth Vega!"
But he's just so amazing to watch
He's just so smart: this little boy
He talks a lot of muddled words
He says a lot of stuff
Some so clear it's beautiful
As he says "I wuv you!"
But you know he's so gorgeous
When he grabs me by the hand
And says "Nana look it's Iron Man"
"He's flying! Look Nana he's here!"
And as I watch I marvel
At this little character
God's beautiful creation
My grandson!

Fly highs

Butterflies are fly highs
To my little grandson
He loves to watch
As I play my games
Bejewelled is my favourite
He cries "Game on!"
He loves to turn
The computer on
He's computer literate
Yet he's just 2 years old
He is right at home with
The ipads, iphone, x-box
And the play station
He's so very up to date!
Just picks it up and points 
That little finger of his
At anything that catches his eye
His latest fad is playing
Angry Birds with Star Wars
He just sets that slingshot
Pulls it back and flings those birds
I must admit he's pretty good at it!
He's fascinated with that robot
Watches it over and over again
My dear little fun loving boy!






UFO 2

A flash: in the blink of an eye
A tiny speck in the night sky
There and then gone again
Then the bright star-like gleam
Like the movement of a laser beam
Across the night black sky
Slowly moving from my left
It moved across my vision there
No aeroplane in my sights
No helicopter flights
So unusual I really must say!
Then it just moved away
Disappeared as if to a mist
Faded quickly as if it was maybe
Just a figment of my imagination!

Mock fish

Ingredients:
4 large potatoes: grated
1 large onion: grated
250 g Cheese: grated
2 eggs
Vegeta to season

Method:
Mix all together
Place in a pasta strainer
Allow juices to drip out

Cook:
Shallow fry tablespoons full in olive oil until browned
(like patties)
Serve with salad

What a name to take on: what a mouth full!
I remember one of the rounds
On wheel of Fortune
His name was the one I had to guess

I wasn't sure how to spell it
But I had a go and won the round!

Recently; at the op shop
Those songs took me right back
To my teenage years

Amy's hair cut

Amy had her hair cut today
I couldn't see any other way
To remove those pesky grass seeds
Those awful prickles that 
End up in my poor girl's fur
They stick into her paws
They stick into her legs
They end up every where
When ever she goes out
It's because her fur is soft
It's because her fur is long
That I have to give her hair cuts
To keep her safe from those ...
Pesky prickles
That torture my dear girl!





Hard boiled

Are you hard boiled?
Do you ever crack?
Will you shatter when?

That hard, hard track?

Because of something that you lack?
Sometimes I wonder
Just how to play this game?

I try to do all the right things

Someone almost baptised
The question is:
Is that close enough?
Is it ever enough?
To be almost saved!
To be almost persuaded!
To be almost to heaven!
How close is almost?

Vegetable Patties

Ingredients: 
1 cup sweet corn
1 cup peas
1 small grated carrot
1 small grated parsnip
1 cup finely cut cabbage
1/4 cup oil
1 teaspoon Tahini (sesame paste)
1 small finely chopped onion
Crushed garlic
2 teaspoons herbs (marjoram, basil, oregano, tarragon, parsley)
1 cup whole meal flour

Method:
Mix all together and shape into patties
Brown in oil
Serve hot 
Or cold with a salad

Cornflake Crunchies

Ingredients:
1 tablespoon honey
3 oz butter
2 oz sugar
4 cups cornflakes

Method:
Heat butter sugar and honey in a saucepan until frothy
Remove from heat
Add cornflakes stirring until thoroughly mixed
Place in Patty cases

Bake:
Bake in moderately slow oven for 10 to 15 minutes


Carrot Sauce

Ingredients:
4 large carrots: grated
1 tablespoon Vegeta
Milk as needed
A little olive oil
A little water
4 tablespoons flour

Method:
Saute grated carrots in olive oil
Add Vegeta and a little water
Allow water to cook off
When carrot is soft and all water is gone
Add flour
Mix well
Add milk  
Cook until flour is well cooked 
And looks creamy with the milk

Aussie Anzac Biscuits

Ingredients:
1 cup rolled oats
1 cup rolled barley
2 cups mixed desiccated coconut, sesame & sunflower seeds
1 cup sugar
1 1/2 cups flour
Pinch of salt 
1 cup butter
2 tablespoons Golden Syrup
2 level teaspoons Bi-carbonate of soda
4 tablespoons water
Blanched almonds

Method:
Sift flour salt and soda
add dry ingredients
Melt Golden Syrup and butter with boiling water
Add to dry mixture
Mix well

Place teaspoonfuls on cold greased oven trays
Put a blanched almond on top of each biscuit

 Bake:
Bake in moderate oven


Queen Cakes

Makes 15 to 18

Ingredients: 
3 oz butter
3 oz castor sugar
2 eggs
2 oz currants
5 oz SR flour
Pinch of salt
2 tablespoons milk
Vanilla essence

Preparations:
Heat gas to 425 degrees F
Electric to 450 degrees F
Bake in top third of oven
Prepare containers

Method:
Cream butter and sugar until light and creamy
Add beaten eggs and essence gradually
Sift flour and salt
Add half flour and mix slightly
Ad milk, fruit and remainder of flour
Fold carefully until smooth

Use a heaped teaspoon of mixture for each paper container

Bake:
Bake for 10 to 15 minutes


Mum's Easy Biscuits and slices

Ingredients:
3 cups SR flour
1 cup sugar
4 oz butter (a bit more for margarine)
2 egg yolks (save whites for topping)
Vanilla essence

Method:
Mix all together and roll out 
Top biscuits with egg white
And hundreds and thousands

Bake:
Bake until lightly browned
In 375 degrees F oven

Same mixture can be used for making jam and meringue slices

Almond Biscuits

Ingredients:
250 g SR flour
250 g cornflour
250 g sugar
250 g butter
250 g ground almonds
4 large eggs

Method:
Cream butter and sugar (creaming method)
Add beaten eggs
Add flour and cornflour 
And lastly the almonds

Place tea spoonfuls onto a cold greased tray
Bake at 400 degrees F
For 10 minutes

Moist Sultana Cake

Ingredients:
5 oz butter
5 oz raw sugar
2 eggs
4 tablespoons milk
1-2 tablespoons apricot jam (will keep the cake moist)
5 oz SR flour
3 oz plain flour
8 oz sultanas
Vanilla essence
Cinnamon

Method:
Grease and line a large cake tin
Use creaming method (mix butter and sugar until creamy)
Add eggs, Vanilla essence and mix
Add half flour and cinnamon an dmix
Add fruit and mix
Add rest of flour and mix well
Add apricot jam and mix
Sprinkle raw sugar and cinnamon over top of cake before baking

Bake:
Bake in centre of oven 
Gas 350 degrees
Electric 375 degrees
For 60 minutes or until centre of cake bounces back to light touch!

Mum's Potato Salad

Ingredients:

6 large potatoes
1 medium chopped onion
6 chopped hard boiled eggs
Mayonnaise
Thickened cream

Method:
Cook potatoes in salted water
Remove from heat and strain potatoes 
While potatoes are still hot
Add the chopped onion
Allow to cool together
When cool; add the boiled eggs
And a small thickened cream 
And a large tablespoon of mayonnaise
Taste to see if more cream or mayonnaise required
Yummy and tangy!

Stuffed Potatoes

Ingredients:
1 medium chopped onion
1 small cauliflower in florets
1 small bunch silver beet
1 red capsicum
1 green capsicum
8 large potatoes
grated cheese
1 tablespoon of oil for sauteing
parsley
Vegeta

Method: 
Microwave potatoes in skins 
Approximately 4 minutes each
Poke with skewer to let steam out
When cooler; spoon out centres

Filling:
Saute onion and add capsicum after 3 minutes
Add chopped cauliflower and cook for 5 minutes
Add parsley,  Vegeta and a little water
Add silver beet and cook until tender
Add scooped out potato
Mix

Spoon mixture back into potato shells
Place grated cheese on top

Cook for 10 minutes in oven until cheese has melted
Garnish with parsley
Serve hot with salad

Play Dough

Ingredients:
2 cups plain flour
1 cup of salt
2 tablespoons cream of tartar
2 tablespoons oil
2 cups water
Food colouring

Method:
Mix all ingredients
Cook in saucepan approximately 5 minutes
Stirring all the time!

Allow to cool! Let the kids have fun!
Store in air tight container

Pumpkin Fruit cake

Ingredients:
4 cups mixed fruit
¼ cup oil
1 ½ cups mashed pumpkin
1 teaspoon vanilla
4 cups flour
2 cups water
½ cup honey
Pinch of salt
3 teaspoons orange or lemon rind
3 teaspoons Health baking powder
(Recipe from Ten Talents)

Method:
Put fruit and water into saucepan
Bring to boil
Leave stand for 10 minutes
Add honey and then rest of ingredients
Mix well
Bake in moderate oven for 1 hour

Soysage

Ingredients:
4 cups soaked soya beans (soaked at least 8 hours)
2 cups whole wheat flour (or other grains: millet, rye oats)
1/2 cup wheat germ (or more whole wheat flour)
1/4 cup oil
2 cups (maybe more) water or other liquid (stock, veg water)
1/2 cup Torula or Brewers yeast
1/2 teaspoon chilli or cayenne 
1/4 cup soya sauce
3 teaspoons mixed herbs (use my own mix of oregano, marjoram, tarragon, basil)
2 tablespoons salt
1 or 2 teaspoons honey (optional)
1 onion
Garlic
Method:
Blend soya beans, soya sauce, onion, garlic, honey etc
Mix with rest of ingredients
Bake covered in a moderate oven
In a flattish pan for about 1 hour

Freezes well. Good hot or cold. 

Can be steamed covered by foil in a pan of about 10 x 14 inches

Nutolene

Ingredients:
3 eggs
1 cup peanut butter
1/2 cup wholemeal flour
1 Finely chopped onion
1 cup cold water
1 cup boiling water
1 1/2 teaspoons salt
1 teaspoon herbs

Method:
Beat eggs in 1 cup cold water
Mix 1 cup peanut butter gradually to a cream with 1 cup boiling water
Combine the mixtures and add 1/2 cup wholemeal flour, salt, onion and herbs
Steam for 2 hours or bake slowly in oven for 3/4 to 1 hour 

May sprinkle top with fine Zweibach crumbs if baked in oven

Vegetarian Veal Roast

Ingredients:
1/4 lb fresh chopped mushrooms
8 oz veg stock
6 oz gluten flour
1 teaspoon soya sauce
Pinch of Marjoram
2 oz peanut butter
1/2 teaspoon salt
1 small grated onion
1/2 teaspoon Marmite
1/2 teaspoon celery salt
2 tablespoons oil

Method:
Cook chopped mushrooms in 8 oz stock (Later to be added to gravy mixture)
Pour liquid off and cool
To the liquid add:
Grated onion
Celery salt
Marmite
Salt 
Marjoram
Soya sauce
Mix:
Peanut butter to a paste in a little of the stock and add to the mixture
Shake in the gluten flour gradually until the mixture is absorbed
Shape into a roast to fit a casserole dish
Place oil into the casserole dish first 
Then place gluten roast into the dish
Pour 2 cups of gravy recipe over the roast and cover with lid

Gravy recipe:
Fry 1 finely chopped onion in 1 tablespoon oil
Add mushrooms and 
2 cups of stock
Simmer for a few minutes thicken with Gravy Quick

Serve with roast

Vegetarian Stuffed Cabbage Rolls


I small cabbage
Ingredients:
Stuffing:
125 g (1/4 lb) soft bread (No crusts)
1 1/2 cups milk (375 ml)
1 clove garlic
I medium chopped onion
2 tablespoons butter (40 g)
1/2 teaspoon marjoram
1/2 teaspoon tarragon
125 g chopped mushrooms (1/4 lb)
3 tablespoons grated cheese
2 eggs
Salt
Stock:
I medium chopped onion
1 tablespoon butter (20 g)
1 1/2 cups stock (375 ml)
2 tablespoons tomato paste

Method:

1. Wash cabbage well and cook whole in boiling salted water until tender
Drain and cool
2. Cut bread into large cubes and soak in milk 1/2 hour. Mash well and press through  strainer
3. Saute onion, garlic and mushrooms in butter; 5 minutes
4. Mix in grated cheese, marjoram, tarragon and lightly beaten eggs. Season with salt to taste
5. Remove leaves of cabbage one by one putting a spoonful of stuffing into each until stuffing mix is finished (make into rolls)
6. Place rolls into a buttered baking dish
7. Saute onion in butter until golden brown
8. Mix stock with tomato paste and combine with sauteed onion
9. Pour over the stuffed cabbage and bake in 180 degree (350 deg) oven for about 1 hour

Serves 4-6
Found in Vegetarian cook book many years ago! 
Tastes delicious!

Lentil Peppers

Cooking Lentils: soak for 5 hours or overnight
Rinse and add 1/2 cup lentils to each pint of stock
Simmer for 45 minutes, stirring occasionally.

Lentil Peppers:
Ingredients
6 peppers (capsicums) keep tops
(Blanched for 3 minutes in  boiling water
Drained, tops cut off, seeds removed)
Combine:
1 cup cooked lentils
1 chopped hard boiled egg
1 chopped onion
1 chopped tomato
1 teaspoon chopped parsley
1 cup breadcrumbs
Fill:
Fill peppers with mixture
Place in oven proof dish
Place 1 teaspoon butter on top of each
Replace pepper tops
Bake:
180 degrees for 45 minutes

Kidney Bean Casserole

Time 20 to 30 minutes Serves 4
Temperature: 350 to 375 Degrees

Ingredients:
1 oz margarine
1 large chopped onion
3 large chopped tomatoes
8 oz cooked peas
1 x 10 oz can of red kidney beans
Salt and seasoning
4 cooked potatoes
Extra margarine
2 tablespoons chopped parsley- garnish

Method:
Heat margarine in saucepan
Add onions and tomatoes
Cook 10 minutes
Add peas and kidney beans
Season to taste
Cook 5 minutes

Place in a greased casserole dish:
Some of the sliced potatoes
Cover with tomato mixture
Top with another layer of sliced potatoes
Dot with extra margarine

Cook in moderate oven for 20 to 30 minutes
Garnish with parsley
Serve with salad

Gluten-free Sunflower Patties

1 cup sunflower seeds
1 cup fine chopped celery
2 eggs
¼ cup fine chopped onion
¼ cup fine chopped parsley
½ cup grated carrot
¼ cup tomato paste
Salt to taste
Oil for frying

Grind about half the sunflower seeds in a coffee grinder or similar device.
Roughly chop the remaining sunflower seeds (a nut chopper is great for doing this).
Mix all ingredients together.
Drop tablespoonfuls into hot oil and fry slowly being careful not to burn. (The tomato paste in the patties tends to go black quickly)
Serve hot or cold.

Vegan Sour Cream
1 cup cashews, soaked for a few hours
¼ cup cold water
2 tbsp apple cider vinegar
¼ tsp salt

Pour water off cashews.
Add delegated water and other ingredients.
Blend for 3 to 4 minutes or until smooth.
Test by taste – may need a little lemon juice added.

Nut Meat Loaf

Method:
Place into a greased casserole dish
1: 1 layer of sliced onions
2: 1 layer of potatoes (boiled in their jackets)
3: 1 layer of chopped mushrooms
4: 1 can of whole tomatoes: pureed
5: 1 layer of crumbled nut meat
6: a few dobs of butter

Place in oven until nut meat is browned
Serve with salad or vegies

Banana Bread



(SACWA Calendar of cakes)

Ingredients:

4 oz (100g) butter
4 oz (100g) sugar
3-4 ripe bananas (depending on size)
8 oz (200g) SR flour
I small tsp bi-carbonate of soda
A pinch of salt
2 eggs
1 gill milk (approx ½ cup)

Method:

Cream butter and sugar, beat eggs thoroughly
Add sifted flour and well mashed bananas
And finally the soda dissolved in the milk
Mix lightly till smooth and creamy

Bake:

In moderate oven in greased tins for about 30 minutes
(In 2 greased log tins – 40 minutes)

Fill:

With whipped cream or ice with chocolate icing

Vegetarian Steaks



Ingredients:
½ cup grated onion
½ cup breadcrumbs
1½ cups soya milk
3 oz gluten flour
1¼ teaspoon salt
2 large eggs
I teaspoon Marmite
I oz chopped walnuts or almonds
I oz sunflower seeds

Gravy ingredients:
2 spoons of gravy mix to 4 cups of water.

Method:
Mix breadcrumbs and gluten flour. Dissolve Marmite in the milk then mix all ingredients together and make into patties. Fry patties in olive oil in frypan, slowly browning. Make onion gravy or tomato and onion gravy as preferred.

Place gravy in large saucepan and add patties and simmer slowly for 30 to 40 minutes.

Sweet Impossible Pie



Ingredients:

½ cup melted butter
4 beaten eggs
½ cup plain flour
2 cups milk
½ cup sugar
2/3 cup coconut
2 teaspoons vanilla essence

Method:

Place all ingredients into the bowl and beat
Pour into a large pie plate
Bake @ 180 degrees C for approx 50 minutes

(Flour settles to form the base
Centre is egg custard
Coconut forms topping)

Mushroom Glutens



Ingredients:
2 eggs
1½ cups soya milk
I finely chopped or grated onion
4 tablespoons chopped walnuts
Pinch of herbs
½ teaspoon salt
5 heaped tablespoons gluten flour
I tin Heinz mushroom soup

Method:

Beat 2 eggs, add 1 ½ cups milk, I grated onion, 4 tablespoons walnuts and pinch of herbs, and salt. Now add the 5 heaped tablespoons of gluten flour and mix till it forms a nice soft mixture.

Deep-fry dessert-spoonfuls of mixture in hot oil until nicely brown. When all are cooked, pop them into the boiling mushroom soup and simmer for 30 minutes.

Meatless Meat



Ingredients:
¾ cup soya sauce
3 ½ cups water
2 cups sunflower seeds
1 cup sesame seeds
1 ½ cups oat bran
I large finely chopped onion
2 dessert spoons herbs (oregano, basil, parsley, tarragon)
4 ½ cups gluten flour
2 tablespoons Brewers yeast or Torula yeast powder

Method:
Add ingredients in order given and knead until well mixed – about 3 minutes

Shape into a round loaf and steam for 1 ½ hours

I cut mine into 4 pieces, then shape into round loaves and steam them separately for 1 ½ hours.

Allow to cool.

When cool, slice into ¼ inch thick slices.
I then freeze most of these in separate freezer bags for later use, in meal sized servings.

Lightly fry in olive oil until both sides are crispy brown. Serve with salad or vegetables.

Grandma's Cinnamon Scrolls



Dough ingredients:
Yeast: 1-2 sachets (dry or wet - depending on age)
½ cup warm water
3 teaspoons sugar
1 kilo plain flour (4 big cups)
Butter or lard (50 cent piece- 2 tablespoons)
2 eggs
100 ml cream
Salt (if butter unsalted)

Method:
Mix sugar, milk and yeast (let it froth)
Put all dry ingredients together
Rub in butter
Make a well in the middle
Add cream, eggs & yeast (frothing)
Turn into dough
Work it hard; add milk until medium/soft
Place into dish and cover for 1-2 hours, in a warm place
(To allow it to rise)
AFTER rising
Roll out flat to a ½ cm thickness

Cinnamon sugar: ingredients
150 g Castor sugar
1 egg
150 g unsalted butter
Cinnamon (to taste)

Method:
Cream butter and sugar together
Add cinnamon

Making the scrolls
Spread the cinnamon sugar mixture into the rolled out pastry
Then roll up into a long sausage
Cut into inch thick portions
Pick up each individual scroll and pinch the bottom closed
(To seal the openings)
Flatten a little onto the tray
Leave to rise for 1-2 hours
Preheat oven to moderate; 200 degrees C
Cook for 10-20 mins until golden brown
Remember to space evenly as they spread while cooking!


Lentil Patties with Peanut Butter

Ingredients:

3 cups cooked lentils
1 cup peanuts
1 large onion
1 carrot
1 pepper (capsicum)
1 stem celery
2 tablespoons peanut butter
1 tsp cumin
½ tsp black pepper
¼ tsp cayenne
1 ½ tsp sea salt
6 cloves garlic
1 cup breadcrumbs
Olive oil

Method:

Toast cumin and garlic
Add olive oil to pan and start frying garlic till golden
Add spices and fry onions till brown
Add finely diced carrot, celery & pepper (capsicum)
& stir fry until soft
Grind peanuts & add with the lentils
Mix in breadcrumbs & form patties
Fry on both sides until golden brown
Put in oven for another 2-3 minutes
